It’s spring and it’s the best time to grill, bake, and roast my favorite in-season fruits and veggies!

With the weather warming up, it’s fun to round up my family for an impromptu al fresco dinner with these fabulous, spring-friendly recipes.


Tomato, Melon, & Cucumber Salad

Fresh vegetables are always a welcome treat during spring for their fresh taste and healthy benefits. This recipe from The Daily Green uses ripe tomatoes, crunchy cucumber, and succulent melon for a light appetizer. Onion and fresh basil are also used to add some spice to this dish while the melon provides a pleasant, sweet taste.

Salmon with Vegetables

This light main dish from BBC Good Food features salmon fillets, peas, beans, and mint. Yes, mint. This delicious dish is packed with mint, which adds a cool taste to your meal, and with a slathering of potatoes for your dose of carbohydrates.

This recipe only takes 20 minutes to prepare, making it a great go-to dish if you’re running late and you need to feed your family fast!

Grilled Pork Tenderloin and Asparagus

Asparagus is an in-season vegetable I wouldn’t mind having every week. It’s a nice change after months of only having winter vegetables.

This recipe from includes asparagus, grilled pork, and a fun peanut dipping sauce for the kids. The asparagus works well with the grilled pork, and the dipping sauce adds taste to the entire dish. This recipe is also great for an afternoon barbeque with your friends.
